Es un flavor característico del aceite obtenido de aceitunas en las que se han desarrollado abundantes hongos y levaduras a causa de haber permanecido amontonadas con humedad de varios días.
Cuando aparece este atributo, la sensación que se percibe en el aceite, es muy parecida a las que proporciona una fruta que se ha enmohecido en el frigorífico. Suele encontrarse en aceites elaborados con aceitunas de suelo, sobre todo si han estado mucho tiempo en contacto con el mismo.
